Mine own recipe! I came up with this tonight! Low calorie mozzarella cheese sticks! Preheat oven to 375 degrees. Take 1 lucerne light string cheese (80 calories for one string cheese. I cut mine into thirds because I didn’t have much left), 1/4 cup of Special K cereal original (crumble up until it looks like bread crumbs and add garlic powder, salt, and pepper to taste), 1/4 cup of egg beaters or egg whites. Roll string cheese in the egg whites, then roll and coat with bread crumb mixture. Place on a cookie sheet sprayed with non stick cookie spray and add another coat of the cooking spray on top of the cheese sticks. Bake for 10 mintues or until cheese is hot! Then enjoy! 90 calories for one whole mozzarella stick!
I noticed that a lot of people do NOT know how to treat their bodies right (trust me, I’m not perfect either). The most important thing to being healthy is eating right. Your body needs calories in order to run its normal functions and if you eat to little your body will go into starvation mode. What is starvation mode?? Well….When you regularly eat too little food to provide your body with the necessary nutrients, it perceives itself to be in danger from starvation. Since your body is wonderfully designed to protect you, it will slow down your metabolism to conserve energy so it can keep vital organs such as the brain and the heart going for as long as possible in the face of the perceived threat. While it will burn fat for fuel, it will also start burning lean muscle mass for fuel, which will slow down your metabolism even further. People on starvation diets invariably find that they regain all the weight they’ve lost (and then some) very quickly as soon as they start eating again. For woman, 1200 calories is the lowest amount you should ever eat in a day, and for men 1500 calories. This is very important if your goal is to be healthy. Now, If you are trying to lose weight it’s important to know what your Basal Metabolic Rate (BMR) is ( http://www.bmi-calculator.net/bmr-calculator/). In order to lose weight you need to eat less calories then your body burns in a day. (and remember NOT to eat less than 1200 for female or 1500 for male). You will start losing weight right away, and you don’t even have to WORK OUT!! If your goal is to gain weight then you need to eat more than your BMR. It takes a deficiency of 3500 calories to lose one pound, and it takes 3500 calories to gain a pound! Knowing this info will help you reach whatever healthy weight you are going for. Remember the most important thing is to be healthy. Our body is like a car…. the better care we take of it, the longer it will take care of us… and the better it will run/look. :) …. you get what I mean. Whole Wheat Gnocchi with Roasted Brussels Sprouts and Lemon Garlic Brown Butter
Brussels Sprouts season is pretty much over, so I thought I’d have one last hurrah. Speaking of seasonal eating, I downloaded a free app called Locavore that tells you what’s in season, what’s coming up and where to shop for local produce.Now if only I could remember to go to the farmer’s market on Saturdays. Am I the only person who thinks Sunday is the best grocery shopping day? Greenpoint is trying to get a Sunday market going in McGlorick Park. Crossing my fingers…
16 oz Whole Wheat Gnocchi
1 1/2 lbs Brussels Sprouts
4 Tbsp Butter
6 cloves Garlic with individual papers wrapping on
1 1/2 tsp Lemon zest
1/4 cup grated Parmesan cheese
3 Tbsp Extra Virgin Olive Oil
Salt & Pepper to tasteFill a sauce pan with water and bring to a boil. Preheat oven to 350 degrees. Chop brussels sprouts into fourths and toss with 1-2 Tbsp of olive oil until coated. Spread onto a baking pan, one layer thick. Sprinkle with salt and roast on bottom rack of the oven, stirring occasionally. Cut the tops of the garlic cloves off. Make a container out of aluminum foil, add garlic and drizzle with olive oil. Roast in the oven with the sprouts until soft. Add gnocchi to boiling water and cook for a few minutes until they float to the top. While they’re cooking, melt butter in a saute pan over medium heat, careful not to burn. Remove roasted garlic cloves paper wrapper and stir into butter. Drain gnocchi in a colander. Once butter begins to brown, remove from heat and toss the gnocchi in the brown butter. Add lemon zest and toss well. Add roasted brussels sprouts and toss again. Salt & Pepper to taste. Serve immediately topped with fresh parmesan.
My healthy lunch -Jalapenos (cut in half and gutted out), Laughing Cow light cheese wedges (Swiss cheese), and fresh cut tomato slices with Dill Weed seasoning and a little bit of Johnies seasoning salt.
Yummy Organic Pizza!! Only 220 calories for half of the pizza. :)
