I cut mine into thirds because I didn’t have much left), 1/4 cup of Special K cereal original (crumble up until it looks like bread crumbs and add garlic powder, salt, and pepper to taste), 1/4 cup of egg beaters or egg whites. Roll string cheese in the egg whites, then roll and coat with bread crumb mixture. Place on a cookie sheet sprayed with non stick cookie spray and add another coat of the cooking spray on top of the cheese sticks. Bake for 10 mintues or until cheese is hot! The most important thing to being healthy is eating right. Your body needs calories in order to run its normal functions and if you eat to little your body will go into starvation mode. What is starvation mode?? Well&amp;#8230;.When you regularly eat too little food to provide your body with the necessary nutrients, it perceives itself to be in danger from starvation. Since your body is wonderfully designed to protect you, it will slow down your metabolism to conserve energy so it can keep vital organs such as the brain and the heart going for as long as possible in the face of the perceived threat. While it will burn fat for fuel, it will also start burning lean muscle mass for fuel, which will slow down your metabolism even further. People on starvation diets invariably find that they regain all the weight they’ve lost (and then some) very quickly as soon as they start eating again. For woman, 1200 calories is the lowest amount you should ever eat in a day, and for men 1500 calories. This is very important if your goal is to be healthy. It takes a deficiency of 3500 calories to lose one pound, and it takes 3500 calories to gain a pound! Knowing this info will help you reach whatever healthy weight you are going for. Remember the most important thing is to be healthy. &lt;p&gt;&lt;em&gt;Brussels Sprouts season is pretty much over, so I thought I’d have one last hurrah.  Speaking of seasonal eating, I downloaded a free app called &lt;strong&gt;&lt;a href="http://www.getlocavore.com/" target="_blank"&gt;Locavore&lt;/a&gt;&lt;/strong&gt; that tells you what’s in season, what’s coming up and where to shop for local produce.Now if only I could remember to go to the farmer’s market on Saturdays. Am I the only person who thinks Sunday is the best grocery shopping day?&lt;strong&gt;  &lt;/strong&gt;Greenpoint is trying to get a Sunday market going in McGlorick Park. Crossing my fingers…&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;16 oz Whole Wheat Gnocchi&lt;br/&gt;1 1/2  lbs Brussels Sprouts&lt;br/&gt;4 Tbsp Butter&lt;br/&gt;6 cloves Garlic with individual papers wrapping on&lt;br/&gt;1 1/2 tsp Lemon zest&lt;br/&gt;1/4 cup grated Parmesan cheese&lt;br/&gt;3 Tbsp Extra Virgin Olive Oil&lt;br/&gt;Salt &amp; Pepper to taste &lt;/p&gt;
&lt;p&gt;Fill a sauce pan with water and bring to a boil.  Preheat oven to 350 degrees.  Chop brussels sprouts into fourths and toss with 1-2 Tbsp of olive oil until coated.  Spread onto a baking pan, one layer thick.  Sprinkle with salt and roast on bottom rack of the oven, stirring occasionally.  Cut the tops of the garlic cloves off.  Make a container out of aluminum foil, add garlic and drizzle with olive oil. Roast in the oven with the sprouts until soft.  Add gnocchi to boiling water and cook for a few minutes until they float to the top.  While they’re cooking, melt butter in a saute pan over medium heat, careful not to burn.  Remove roasted garlic cloves paper wrapper and stir into butter.  Drain gnocchi in a colander.  Once butter begins to brown, remove from heat and toss the gnocchi in the brown butter.  Add lemon zest and toss well.  Add roasted brussels sprouts and toss again.  Salt &amp; Pepper to taste.  Serve immediately topped with fresh parmesan. &lt;/p&gt;

&lt;p&gt;&lt;span&gt;Ingredients:&lt;/span&gt;&lt;br/&gt;&lt;span&gt;1 ½ t chili oil (found near the Asian ingredients)&lt;/span&gt;&lt;br/&gt;&lt;span&gt;½ lb 95% lean ground beef&lt;/span&gt;&lt;br/&gt;&lt;span&gt;1 T taco seasoning&lt;/span&gt;&lt;br/&gt;&lt;span&gt;¾ c canned black beans, drained and rinsed&lt;/span&gt;&lt;br/&gt;&lt;span&gt;16 wonton wrappers (found in the produce section)&lt;/span&gt;&lt;br/&gt;&lt;span&gt;5 T + 1 t of queso dip or salsa con queso &lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;&lt;/span&gt;&lt;span&gt;1 c chunky salsa &lt;/span&gt;&lt;br/&gt;&lt;span&gt;1 c reduced fat shredded Mexican cheese (I used Weight Watchers brand)&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;Directions:&lt;/span&gt;&lt;br/&gt;&lt;span&gt;1.    Pre-heat the oven to 375. Lightly mist 8 cups in a muffin tin with cooking spray and set aside.&lt;/span&gt;&lt;br/&gt;&lt;span&gt;2.    Heat chili oil in a sauté pan or large skillet over medium-high heat, add the ground beef and taco seasoning and brown beef, breaking it up with a spoon. Add black beans and continue to cook, stirring occasionally, for a few minutes until warm.&lt;/span&gt;&lt;br/&gt;&lt;span&gt;3.    Push a wonton wrapper into the bottom of each of the eight sprayed cups in the muffin tin. Spoon a teaspoon of queso dip into each wonton wrapper and spread across the bottom. Follow by spooning some of the meat/beans mixture into each cup (using about half the total mixture) and then splitting ½ cup of the salsa evenly into each cup. Sprinkle about half the shredded Mexican cheese evenly over the top of each cup. Press another wonton wrapper on top and repeat the layering steps with the remaining ingredients.&lt;/span&gt;&lt;br/&gt;&lt;span&gt;4.    Bake for 18-20 minutes until golden brown. &lt;p align="left"&gt;&lt;span class="ingredient"&gt;One yellow squash (or zucchini), Pizza sauce, Shredded Mozzarella cheese, Pizza topping (any kind you’d like). I used turkey pepperoni, onions, and green peppers.&lt;/span&gt;&lt;/p&gt;
&lt;p align="left"&gt;&lt;span class="ingredient"&gt;Peheat oven to 400 degrees. Place pizza boats on a cookie sheet with non stick cooking spray and bake for 20-25 minutes. Then enjoy!&lt;/span&gt;&lt;/p&gt;

&lt;p align="left"&gt;&lt;span class="ingredient"&gt;1 medium head cauliflower, &lt;/span&gt;&lt;span class="ingredient"&gt;1 teaspoon sesame oil, &lt;/span&gt;&lt;span class="ingredient"&gt;1 teaspoon extra-virgin olive oil, &lt;/span&gt;&lt;span class="ingredient"&gt;1/2 teaspoon coarse salt &lt;/span&gt;&lt;span class="ingredient"&gt;1/4 teaspoon coarsely-ground black pepper&lt;/span&gt; &lt;/p&gt;
&lt;p align="left"&gt; Preheat oven to 400°F. Rinse cauliflower; cut into quarters. Cut off and discard leaves and cores; cut quarters into 1/4- to 1/2-inch-thick slices.&lt;/p&gt;
